This may surprise you, but I am a huge football fan. Every year, I love to organize an evening with friends to watch the Super Bowl and this year will be no exception to the tradition.

However, I admit that I hate eating chicken wings, because removing the little bones requires too much work and the mountain of bones that accumulate ruins my appetite.

This brings me to present to you my recipe for cauliflower wings which, in addition, is economical, beneficial to your health and will delight your vegetarian or even vegan loved ones!

Chipotle Cauliflower “Wings”

Ingredients

  • 1 cauliflower, washed and cut into bite-sized pieces
  • ¾ cup flour (of your choice)
  • 1 cup of milk (or unsweetened vegetable drink for the vegan version)
  • 2 teaspoons of smoked paprika
  • Garlic powder, salt and pepper to taste
  • 3 tablespoons garlic olive oil (optional) or regular
  • 3 tablespoons chipotle olive oil
  • 1 tablespoon of maple syrup
  • Sriracha type hot sauce to taste

Chipotle Cauliflower “Wings”

Ingredients

  • 1 cauliflower, washed and cut into bite-sized pieces
  • ¾ cup flour (of your choice)
  • 1 cup of milk (or unsweetened vegetable drink for the vegan version)
  • 2 teaspoons of smoked paprika
  • Garlic powder, salt and pepper to taste
  • 3 tablespoons garlic olive oil (optional) or regular
  • 3 tablespoons chipotle olive oil
  • 1 tablespoon of maple syrup
  • Sriracha type hot sauce to taste



Preparation

  1. Preheat oven to 450ºF.
  2. In a large bowl, combine flour, milk, paprika, garlic powder, salt and pepper. Add the cauliflower bites and mix well
  3. On a baking tray, brush about half of the garlic olive oil and spread the cauliflower bites on it then bake for 20 minutes.
  4. Meanwhile, in another large bowl, combine chipotle olive oil, maple syrup and hot sauce.
  5. Remove the cauliflower from the oven and pour it into the bowl with the chipotle olive oil seasoning, then mix well.
  6. Brush the baking tray again with the other half of the garlic olive oil, place the cauliflower bites then bake again for 10 minutes.

Serve hot and enjoy!

By the way, you can serve these cauliflower wings with your favorite sauces, replacing half of the mayonnaise with plain Greek yogurt for an even more filling and less fatty accompaniment!
