Extra medium virgin olive oil is a delicate oil with strong, herbaceous flavors that are halfway between a sweet and a robust. This oil has a peppery finish and a more present bitterness than a sweet oil.

It is perfect for all kinds of cold applications in the kitchen such as salad dressings, marinades, mayonnaises, etc. It can be heated up to 210 degrees Celsius.

Medium olive oil: Kritsa - Greece

The olive groves of Kritsa are the oldest in Crete. They are located in the Kritsa hill at a height of 700m. The region has a hot, dry, semi-mountainous and very sunny climate. It also has ideal soil conditions which are perfect for growing olive trees.

Each drop of this oil reveals a unique taste produced for over a century. Its story began in 1927, when a group of passionate olive growers from the Kritsa region set out to give the world a superior olive oil, with a peppery flavor and very low acidity. Our mono cultivar is made from Koroneiki olives. The fruit is picked as soon as it is fully ripe and, in a few hours, its juice is ready to travel around the world.

Medium extra virgin olive oil has a polyphenol level varying between 200 and 300 ppm.

Polyphenols are organic molecules from the plant kingdom. They are found naturally in plants and fruits. Their name comes from the fact that they occur as a phenolic grouping, a complex structure of molecules. They are beneficial for health because they have antioxidant power.

Exceptionally, Kritsa is considered average despite the fact that it has 574 ppm. Which makes it a very good olive oil for health.
