Ingredients
- 1/2 cup corn
- 1/2 cup mango in small cubes
- 1/2 cup cubed tomato
- 2 tbsp. tablespoon chopped shallots
- 2 tbsp. tablespoon chopped green onions
- 1 C. tablespoons of extra virgin olive oil
- 2 tbsp. tbsp white peach balsamic vinegar
- Salt and pepper

- Salsa can be used in canapes as a starter, with chicken, shrimp, on salmon, etc.
