Sweet olive oil: Arbequina - Spain or Portugal
This Arbequina is an absolutely sublime green olive oil. Its taste is floral and it reveals very complex fruity notes of tropical fruits, blackberries and berries. Its flavor is also quite herbaceous with complements of green apple, mint, cinnamon and black pepper. This oil has a nice balance between spiciness and bitterness which complements the fruity taste well.
Extra virgin olive oil has a polyphenol level varying between 100 and 200 ppm.
Polyphenols are organic molecules from the plant kingdom. They are found naturally in plants and fruits. Their name comes from the fact that they occur as a phenolic grouping, a complex structure of molecules. They are beneficial for health because they have antioxidant power.
