Ingredients

  • 1 cup broccoli florets
  • 1 half onion, roughly chopped
  • 1 cup spinach
  • 1 cup of vegetable broth
  • 1/4 cup unsalted cashews
  • 1/4 cup grated parmesan
  • 2 tbsp. tablespoons of plain Greek yogurt
  • 2 tbsp. tablespoons of extra virgin olive oil

Ingredients

  • 1 cup broccoli florets
  • 1 half onion, roughly chopped
  • 1 cup spinach
  • 1 cup of vegetable broth
  • 1/4 cup unsalted cashews
  • 1/4 cup grated parmesan
  • 2 tbsp. tablespoons of plain Greek yogurt
  • 2 tbsp. tablespoons of extra virgin olive oil

Preparation

  1. Boil the broccoli and onions in the vegetable stock until fully cooked and set aside.
  2. Brown the spinach over high heat in olive oil.
  3. Dry roast the cashews.
  4. Mix all the ingredients in a food processor to obtain a smooth sauce.
  5. Add the Greek yogurt and mix well.

Excellent sauce for chicken or pasta!
