Ingredients
- Thinly Sliced Heirloom Tomatoes
- Thinly Sliced Yellow Tomatoes
- Balsamic glaze
- Fresh mozzarella or burrata of your choice
- Slices of homemade bread
For the pesto
- 1 cup basil
- 1/2 cup salted cashews
- 1/2 cup parmesan
- 1 C. teaspoon pepper
- 1 cup garlic olive oil

For the pesto
- 1 cup basil
- 1/2 cup salted cashews
- 1/2 cup parmesan
- 1 C. teaspoon pepper
- 1 cup garlic olive oil
Preparation
For the pesto:
- In a food processor, grind the cashews and parmesan.
- Add the basil and olive oil.
- Season and puree until smooth.
- For a creamier pesto, drizzle in the olive oil.
For assembly:
- Toast your bread.
- Spread a good layer of pesto.
- Spread the tomatoes and cheese.
- Finish with a drizzle of balsamic glaze.
