Beef tartare recipe featuring our garlic olive oil and beef and tartare spice blend.

This recipe is a creation of our collaborator, Tim Lebrasseur .

Bovine Tartar

Ingredients

For the tartare:

  • 400g. beef

For the sauce:

  • 1 egg yolk
  • 2 pinches of beef and tartar spice mix
  • Required amount of olive oil with garlic
  • 1 teaspoon Dijon mustard
  • Capers to taste
  • 5 drops of Worcestershire sauce
  • 2 teaspoons sambal oelek
  • 1 pinch of fresh parsley
  • 1 pinch of salt
  • 2-3 turns of pepper mill

Bovine Tartar

Ingredients

For the tartare:

  • 400g. beef

For the sauce:

  • 1 egg yolk
  • 2 pinches of beef and tartar spice mix
  • Required amount of olive oil with garlic
  • 1 teaspoon Dijon mustard
  • Capers to taste
  • 5 drops of Worcestershire sauce
  • 2 teaspoons sambal oelek
  • 1 pinch of fresh parsley
  • 1 pinch of salt
  • 2-3 turns of pepper mill

Preparation

  1. Slice the beef into cubes for the tartare and set aside to cool.
  2. Vigorously whisk the egg yolk with the Dijon mustard and gradually add the olive oil and garlic until you obtain a mayonnaise texture.
  3. Then add all the sauce ingredients and mix well.
  4. Mix the beef and sauce well, adding a little sauce at a time. (For 400g of beef, I added all the sauce, but that's up to you.)
  5. To assemble ! Let your creativity flow. (Round or square cookie cutter, no cookie cutter, already on croutons, in an endive leaf, in a Boston lettuce leaf, etc.
