Zucchini and Roasted Red Pepper Hummus

Humus

Ingredients

  • 1 cup peeled and chopped zucchini
  • 1/2 cup tahini
  • 1/3 cup sesame seeds
  • 3 tbsp. tablespoons of extra virgin olive oil
  • 3 cloves of garlic
  • 1 C. teaspoon paprika
  • 1 C. teaspoon of salt
  • 1 pinch of cumin
  • 1 pinch of cayenne pepper
  • 1/2 roasted red pepper, diced
  • 1 drizzle of Harissa olive oil

Humus

Ingredients

  • 1 cup peeled and chopped zucchini
  • 1/2 cup tahini
  • 1/3 cup sesame seeds
  • 3 tbsp. tablespoons of extra virgin olive oil
  • 3 cloves of garlic
  • 1 C. teaspoon paprika
  • 1 C. teaspoon of salt
  • 1 pinch of cumin
  • 1 pinch of cayenne pepper
  • 1/2 roasted red pepper, diced
  • 1 drizzle of Harissa olive oil

Preparation

  1. Place in the blender bowl: zucchini, lemon juice, olive oil, garlic, paprika, salt, cumin and cayenne pepper.
  2. Add the tahini and sesame seeds. Blend until creamy.
  3. Pour into a serving bowl and add the diced roasted red pepper and a generous drizzle of Harissa olive oil.

Store in the refrigerator for 4 to 5 days
