Our guest chef, Annie Caron of the Annie Caron Culinary Academy, invented this simple recipe because she always ate it at restaurants and wanted to create her own version!

A tasty and fresh recipe, perfect to end the month of March, nutrition month!

We always benefit from eating well, for our physical and mental health, and of course, for the pleasure of tasting tasty, fresh and minimally processed foods!

  • 8 cups fresh baby spinach
  • 2 cups strawberries, cut into pieces
  • 100 g (1 cup) pecans
  • 1 cup goat cheese or blue cheese, crumbled

Preparation

(Approximately 15 minutes)
  1. In a small bowl, whisk together all the vinaigrette ingredients.
  2. In a salad bowl, mix all the salad ingredients and add the
    Vinaigrette.

Have fun modifying the recipe by replacing the strawberries with raspberries, blueberries or blackberries.

Spinach is a fascinating vegetable. In addition to facilitating digestion, containing plenty of iron, vitamin K, vitamin C, helping to reduce inflammation, inhibiting the growth of cancer cells, reducing symptoms of fatigue, it helps improve athletic performance like for Popeye!
