Summer Dressings Made Easy
To take advantage of Quebec's harvests or add a summer touch to meals, marinated dishes and salads are often found on our table in summer.
However, commercial salad dressings added to these dishes often contain additives, ingredients with unpronounceable names, and lots of salt and sugar.
In order to add freshness, flavor and variety to your summer menus with healthier alternatives that are simple and quick to prepare, here are my top 3 of the best marinades and vinaigrettes based on delicious quality products from Olives & Delicacies.
Olive oil with Provence herbs
With its well-balanced herbaceous taste, this oil with flavors of rosemary, thyme, bay leaves, savory and lavender will certainly transport you to the fields of France. Here are the recipes that I enhance with this oil that white balsamic vinegar complements wonderfully:
Olive tapenade
Use Provence herb oil and pour a few drops of white balsamic vinegar over the tapenade when serving to awaken the taste buds
Nicoise salad
Replace the classic vinaigrette with ¼ cup of Provence herb oil, 15 ml of white balsamic vinegar and 5 ml of Dijon mustard.
Blood orange olive oil
The blood orange scent and hint of bitterness make this oil a must-have for flavoring chicken and fruit salads! The slightly tangy and sweet touch of dark tangerine balsamic vinegar makes this pairing ideal for complementing these two salads.
Chicken, citrus and avocado salad
Use blood orange oil and replace the orange juice with 30 ml of tangerine balsamic vinegar (this also reduces the amount of sugar in this recipe)
Summer fruit salad
Omit the lemon juice and replace with 15 ml of blood orange oil, 30 ml of tangerine balsamic vinegar and replace the white sugar with 15 ml of dark maple balsamic vinegar if desired.

Replace the lemon juice with 30 ml each of grapefruit and coconut balsamic vinegar (lemon zest becomes optional). Transform this salad into a mouth-watering and nourishing meal by adding a can of drained and rinsed white beans
Coconut Grapefruit Shrimp Bites
Replace the coconut milk with ¼ cup of coconut balsamic vinegar (this reduces the fat content of the starter) and use 30 ml of grapefruit balsamic vinegar in place of the lime juice.
