Recipe

A seafood paella recipe featuring our lemon olive oil.

What a great recipe idea for Mother’s Day! We put the dish in the center of the table and everyone helps themselves and helps themselves! 😉

Seafood paella

Serving: between 4 and 6
Cooking time: 30 min
Preparation time: 25 min

Ingredients :

  • 2 cups vegetable or lobster broth (see note)
  • 1 C. teaspoon saffron
  • 1 steamed lobster, remove the meat
  • 12 large raw shrimp
  • 1 lemon cut in half
  • Juice ½ lemon
  • 2 tbsp. tbsp lemon olive oil
  • 1 C. teaspoon sea salt
  • 1 C. teaspoon regular smoked paprika

For the paella:

  • 2 tbsp. tbsp medium extra virgin olive oil
  • 1 C. tbsp lemon olive oil
  • 1 yellow onion, sliced
  • 3 cloves of garlic, chopped
  • 1 cup seeded and diced red pepper
  • 2 tbsp. teaspoon smoked or regular paprika
  • 1 cup bomba, paella or Valencia rice
  • ¼ cup of white wine
  • 1 can of 154ml diced tomatoes
  • 12 clams or mussels
  • ¾ cup frozen peas
  • 2 tbsp. chopped fresh parsley

  • 1 C. tbsp lemon olive oil

  • ¼ cup of white wine
  • 1 can of 154ml diced tomatoes
  • 12 clams or mussels
  • ¾ cup frozen peas
  • 2 tbsp. chopped fresh parsley

Preparation

  1. Heat the broth in a medium saucepan over medium-low heat. Once the broth is hot, sprinkle with saffron threads, and remove the pan from the heat. Set the broth aside to steep for 15 minutes.
  2. Place prepared lobster and shrimp in a large bowl. Drizzle with lemon olive oil, lemon juice and season with salt and paprika, toss to coat. Cook the shrimp in a pan. When the shrimp are halfway cooked, add the lobster. Meanwhile, place the lemon cut in half in broil mode either on the grill or in the oven.
  3. In a pan, paella if you have one, add the two olive oils, heat slightly and add the onion, garlic, pepper and sauté for 8 to 10 minutes until lightly browned. roasted and tender. Add paprika, salt and rice, stir frequently for 3 minutes.
  4. Deglaze the pan with the wine and, allowing it to evaporate by half, add the saffron broth and the diced tomatoes. Stir to combine and bring to a light boil.
  5. Cook for about 15 minutes, uncovered, stirring occasionally.
  6. Clean the clams or mussels and discard any opened ones.
  7. Place the clams or mussels in the rice, add the peas, cover the pan and continue cooking for 15 at a lower heat, or until the rice is tender, the liquid has been absorbed and the clams or mussels have opened (discard any clams that have not opened).
  8. Remove the pan from the heat, add the grilled shrimp and lobster, lemon and cover for a few minutes.
  9. You can transfer your paella to a serving dish and add the chopped parsley before serving.

Note: I make my own lobster broth. Here is the recipe:

  • Carcass of 2 to 4 lobsters
  • 4L of water
  • 1 onion cut
  • Black peppercorns
  • 2 stalks of celery, cut
  • 2 cloves of garlic, chopped
  • 1 carrot cut
  • 1 can of 156ml tomato paste
  • 1 bay leaf
  • 3 tbsp. tbsp medium extra virgin olive oil
  1. Brown the onion, celery, garlic and carrot for 3 to 4 minutes over medium heat.
  2. Add the other ingredients, simmer for 1h30.
  3. Pass through a sieve and leave to cool.

You can freeze it.
