What's better than a meal cooked with love by a loved one for Valentine's Day?

Every Valentine's Day, Catherine's lover Bernard concocts a little dish especially for her. This year, it was my turn and my boyfriend's to cook for you, for Valentine's Day.

Couscous salad, BBQ grilled chicken and Cara-Cara orange sauce.

Ingredients

(2 servings)

For the couscous salad

  • 1 cup couscous, cooked
  • 2 tbsp. tbsp pistachios
  • 2 tbsp. tablespoons of golden raisins
  • 2 tbsp. tablespoon fresh mint, chopped
  • 1 cara cara orange (flesh only, cut into quarters (or supreme)
  • 1/2 lemon (juice only)

For the chicken:

  • 2 boneless chicken breasts
  • 2 tbsp. tbsp . All-All spice blend
  • 1 cara cara orange, zest only
  • 2 tbsp. tbsp BBQ sauce (see note)

For the sauce:

For the couscous salad

  • 1 cup couscous, cooked

Preparation

  1. In a cauldron of boiling water, boil the whole orange (yes!) for 20 min. Send the whole boiled orange to the blender with all the other sauce ingredients. To book.
  2. Using a drizzle of extra-mild olive oil , coat the chicken with the BBQ spices and orange zest. Season with salt and pepper.
  3. In a pan over high heat (or on the BBQ), sear the chicken for 3-4 minutes or depending on the thickness of the breasts. Leave to rest for 5 minutes before slicing.
  4. For the couscous salad, put all the ingredients in a bowl. Add a few drops of olive oil and season with salt and pepper. Mix well.
  5. Serve the couscous with the chicken slices, the BBQ sauce and a drizzle of the orange sauce.
