Ingredients

For the sauce:

  • 1 cup raspberries, crushed with a fork
  • 2 tbsp. tablespoons of light cream cheese, crushed with a fork
  • 1 C. tablespoon of raspberry balsamic vinegar
  • 1 C. tablespoon of maple syrup
  • 2 tbsp. teaspoon sumac

  • 1 cup raspberries, crushed with a fork
  • 2 tbsp. tablespoons of light cream cheese, crushed with a fork
  • 1 C. tablespoon of raspberry balsamic vinegar
  • 1 C. tablespoon of maple syrup
  • 2 tbsp. teaspoon sumac

Preparation

  1. In a small bowl, combine all the sauce ingredients. Season with salt and pepper and mix well. To book.
  2. Using a drizzle of extra medium virgin olive oil , coat the steaks with the spices. Season with salt and pepper.
  3. In a pan over high heat (or on the BBQ), sear the steaks for 1 to 3 minutes on each side, depending on the thickness of the steaks and the desired doneness. Let sit for 5 minutes before slicing.
  4. In a large bowl, combine all the salad ingredients. Add a drizzle of extra virgin olive oil and season with salt and pepper. Mix well.
  5. Serve the steak slices with the sauce and salad.

Fitcook tip: If you want the smoothest sauce possible, it's super simple! All you have to do is send your raspberries to the blender with a little water to make a puree. Then, sift this puree to obtain a raspberry coulis. This sweet and fruity preparation will be the perfect base for our sauce, with an original acidity “kick” coming from the raspberry balsamic vinegar.
