1. In a 9-inch diameter cast iron skillet, add the olive oil to the butter to fill the bottom of the pan.
2. Add half the blueberries and half the maple sugar and cook for 10 minutes over medium heat, stirring regularly until you obtain the consistency of jam.
3. Remove from heat, add remaining blueberries and sugar, flour, lemon olive oil and maple-bourbon balsamic. Mix well.
4. For the dough, in a bowl, mix all the ingredients with a wooden spoon, without trying to break up the lumps.
5. Using a spoon, put balls of dough on the blueberries, being careful not to put any on the edge of the pan.
6. Cook on the BBQ at 400 degrees indirectly with the lid closed for 15 minutes then turn the pan 90 degrees to continue cooking for another 15 minutes. Tip: Insert a toothpick inside the dough. If it comes out clean, it's ready!
7. Let cool for 10 minutes and serve with a scoop of ice cream!
