1. Preheat oven to 350F. Butter an 8-inch springform pan with removable bottom.
2. In a bowl, beat the egg with an electric mixer with the sugar and lemon zest until the mixture whitens and becomes foamy.
3. Add the olive oil, milk and balsamic vinegar. Mix well.
4. In another bowl, mix the flour and baking powder. Then, fold the dry ingredients into the ingredients in the other bowl.
5. Spread the batter in the pan and bake in the center of the oven for about 35 minutes or until a toothpick comes out clean.
6. Let cool to room temperature. Add desired fruit and sprinkle with icing sugar before serving.
It could be served with whipped cream or custard. 🥰
