1. Preheat the barbecue to high. Place a large cast iron skillet directly on the grill.
2. Mix marinade ingredients in a bowl. Place the potatoes in the cast iron pan, with about 1/3 of the marinade. Salt and pepper. Cook, stirring occasionally, for about 8 minutes. Add the chorizo and brown for 2 more minutes. Add the onion, corn and remaining marinade. Let cook for 2 to 3 minutes. Add shrimp and sauté until cooked, 2 to 3 minutes. Garnish with parsley and serve with the smoked Cajun mayonnaise.
Note: Recipe for smoked Cajun mayonnaise
Place 1/2 cup mayonnaise in a small bowl. Add 1 tbsp. Cajun spices, 1 tbsp. of smoked olive oil and 1 tsp. teaspoon of maple syrup. Add salt and pepper to taste. Mix.
