1. Preheat oven to 400F
2. Mix the liquid vegetable ingredients in a bowl to make a marinade. Then place the vegetables on a cookie sheet covered with parchment paper. Pour in the marinade, salt and pepper. Mix well.
3. For the salmon, combine the olive oil, lemon zest and spices in a bowl and pour over the fillets. Coat well.
4. Cook 15-20min at 400F or until the salmon is slightly pink.
5. Serve with potatoes or rice and a nice tzatziki sauce for example.
