Cumin-cocoa crusted steak with fruity salad on creamy raspberry sauce

Ingredients
For the sauce:
- 1 cup raspberries, crushed with a fork
- 2 tbsp. tablespoons of light cream cheese, crushed with a fork
- 1 C. tablespoon of raspberry balsamic vinegar
- 1 C. tablespoon of maple syrup
- 2 tbsp. teaspoon sumac
For the steaks:
- 2 steaks of your choice
- 2 tbsp. tablespoon of steak and grill spice
For the salad:
- 2 cups of arugula
- 1/4 cup parsley, chopped
- 1 apple of your choice, julienned
- 4 radishes, julienned
- 1 C. tablespoons of apple-pomegranate and quince balsamic vinegar

Preparation
- In a small bowl, combine all the sauce ingredients. Season with salt and pepper and mix well. To book.
- Using a drizzle of extra medium virgin olive oil , coat the steaks with the spices. Season with salt and pepper.
- In a pan over high heat (or on the BBQ), sear the steaks for 1 to 3 minutes on each side, depending on the thickness of the steaks and the desired doneness. Let sit for 5 minutes before slicing.
- In a large bowl, combine all the salad ingredients. Add a drizzle of extra virgin olive oil and season with salt and pepper. Mix well.
- Serve the steak slices with the sauce and salad.
Fitcook tip: If you want the smoothest sauce possible, it's super simple! All you have to do is send your raspberries to the blender with a little water to make a puree. Then, sift this puree to obtain a raspberry coulis. This sweet and fruity preparation will be the perfect base for our sauce, with an original acidity “kick” coming from the raspberry balsamic vinegar.
