Zucchini and Roasted Red Pepper Hummus

Humus
Ingredients
- 1 cup peeled and chopped zucchini
- 1/2 cup tahini
- 1/3 cup sesame seeds
- 3 tbsp. tablespoons of extra virgin olive oil
- 3 cloves of garlic
- 1 C. teaspoon paprika
- 1 C. teaspoon of salt
- 1 pinch of cumin
- 1 pinch of cayenne pepper
- 1/2 roasted red pepper, diced
- 1 drizzle of Harissa olive oil
Humus
Ingredients
- 1 cup peeled and chopped zucchini
- 1/2 cup tahini
- 1/3 cup sesame seeds
- 3 tbsp. tablespoons of extra virgin olive oil
- 3 cloves of garlic
- 1 C. teaspoon paprika
- 1 C. teaspoon of salt
- 1 pinch of cumin
- 1 pinch of cayenne pepper
- 1/2 roasted red pepper, diced
- 1 drizzle of Harissa olive oil
Preparation
- Place in the blender bowl: zucchini, lemon juice, olive oil, garlic, paprika, salt, cumin and cayenne pepper.
- Add the tahini and sesame seeds. Blend until creamy.
- Pour into a serving bowl and add the diced roasted red pepper and a generous drizzle of Harissa olive oil.
Store in the refrigerator for 4 to 5 days
