  • 2 French shallots
  • 2 cloves of garlic, halved and degermed
  • 1 tablespoon whole wheat flour
  • 1 tablespoon basil olive oil
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • Pepper, to taste
  • 1 to 2 tablespoons chipotle olive oil, for cooking
